Today I’m sharing the ultimate Brunch Meal Prep Buffet for the holidays! These healthy brunch recipes are healthy, easy to make and delicious!

FEATURED RECIPES:
Sweet Potato Crust Quiche:
Crust:
2 sweet potato grated (3 1/2 cups)
1 tbsp. spelt flour
1 egg
1 tbsp. coconut oil
1/2 tsp. sea salt
1/4 tsp. black pepper
1/4 tsp. paprika
1/2 tsp. garlic powder
Bake @ 425F 20-25min

Filling:
5 Great Value Organic Eggs
1 cup unsweetened soymilk
¼ cup soft goat cheese
2 cups sliced mushrooms
2 shallots finely chopped
2 leafs of fresh sage thinly sliced
1/2 tsp. salt
1/4 tsp. pepper
1/8 tsp. nutmeg
1/2 tsp. garlic powder
Bake 350F for 40 min covered with foil and
20 min uncovered
Let sit for 10 min before cutting.

Oven Bacon:
Pre-heat oven to 375F Lay bacon evenly spaced out on a baking sheet lined with parchment paper and bake for 15-17 min, flipping half way though.
Orange Juice Sparklers:
Fill each glass with 1 TBSP of pomegranate seeds, 2 sprigs of fresh mint, 4oz Florida Orange Juice and top it off with sparkling water to the top.
Broiled Florida Grapefruit:
Cut Florida Grapefruit in half and place on a casserole dish with a drizzle of honey and broil on high in the oven for 4-6 min until slightly golden. Keep a close eye on it as it will cook quickly.
