COLD RICE NOODLES
(makes 2 servings)
1/2 package vermicelli rice noodles
1/2 tablespoon grapeseed oil
6 green onions, white parts sliced, save some of the green parts for garnish
1/2 block extra-firm tofu, cubed
1/4 head of red cabbage
1/4 cup rice vinegar
3 tablespoons soy sauce
1 tablespoon maple syrup
1 teaspoon toasted sesame oil
Bring 4 cups of water to a boil. Remove from the heat then add the noodles. Let them sit in the hot water for about 4 minutes, until they’re tender. Drain and rinse.
Warm grapeseed oil in a skillet on medium heat. Add the green onions, and tofu, and cook until the onions are tender and the tofu slightly browned, about 8 minutes.
While that is cooking, shred the cabbage on a box grater, or thinly slice it with a sharp knife. Set it aside in a mixing bowl.
In another mixing bowl combine the rice vinegar, soy sauce, maple syrup, and sesame oil. Use a fork to whisk it well. Pour about half of it over the cabbage, and massage it in with your hands. The cabbage will soften as you do this.
Into that bowl add the tofu and green onions, and the noodles. Followed by the remainder of the sauce.
Toss well, and serve.
